Asian Cucumber Salad

Cucumbers are one of the essentials for summer and there are numerous ways to turn them into salads. This is my take on a cucumber salad, which I made using Asian ingredients. It goes well with Thai Red curry.


  • 2 Cucumbers Cut into Sticks
  • 1 Tbsp Peanuts Roasted and Crushed
  • For the Dressing
  • 1 Tbsp Lemon Juice
  • 1/2 Tbsp Soya Sauce
  • 1/2-Inch Ginger Minced
  • Salt
  • Pepper
  • Basil for Garnish


Prep: 15 minutes
Cooking: 5 minutes

  1. For the dressing, combine lemon juice, soya sauce, ginger, salt and pepper. Whisk well.
  2. Before you sit to eat, mix cucumber and peanuts, add the dressing and basil leaves. Mix well and serve.
