An unconventional take on Baingan Bharta, this is a versatile dish. It can be enjoyed as a spread with simple grilled chicken sandwiches and rolls, used as a spread over cream crackers with a bit of crumbled cheese, or even on flat mini pizza or lightly toasted pita bread.
Ingredients
- 1 Eggplant
- 5 Garlic Cloves
- 1 Onions (chopped)
- 1 Tomato (chopped)
- 5gm Coriander Leaves
- 2 Teaspoons Lemon Juice
- 1 Teaspoon Chaat Masala
- Salt, Pepper & Sugar to Taste
- 1 Teaspoon Mustard Seeds
- 1 Teaspoon Cumin Seeds
- 2 Green Chillis (chopped)

- Roast the eggplant and garlic.
- Chop onions, tomato and coriander leaves.
- Put all the above ingredients in a bowl and add lemon juice to them.
- For seasoning, add chaat masala, salt, pepper and sugar.
- For simple tempering use mustard seed, cumin seed and green chilli.
- Place the entire mixture in a bowl and garnish with freshly chopped coriander.
