Baingan Bharta

An unconventional take on Baingan Bharta, this is a versatile dish. It can be enjoyed as a spread with simple grilled chicken sandwiches and rolls, used as a spread over cream crackers with a bit of crumbled cheese, or even on flat mini pizza or lightly toasted pita bread.


  • 1 Eggplant
  • 5 Garlic Cloves
  • 1 Onions (chopped)
  • 1 Tomato (chopped)
  • 5gm Coriander Leaves
  • 2 Teaspoons Lemon Juice
  • 1 Teaspoon Chaat Masala
  • Salt, Pepper & Sugar to Taste
  • 1 Teaspoon Mustard Seeds
  • 1 Teaspoon Cumin Seeds
  • 2 Green Chillis (chopped)


Prep: 15 minutes
Cooking: 10 minutes

  1. Roast the eggplant and garlic.
  2. Chop onions, tomato and coriander leaves.
  3. Put all the above ingredients in a bowl and add lemon juice to them.
  4. For seasoning, add chaat masala, salt, pepper and sugar.
  5. For simple tempering use mustard seed, cumin seed and green chilli.
  6. Place the entire mixture in a bowl and garnish with freshly chopped coriander.
