Banana Puri or Mangalore Buns

During the lockdown, banana has been a relatively easy-to-find fruit that rapidly became the most sought-after quarantine ingredient. So much so that it would go down in history as the banana renaissance. My banana puri or Mangalore buns recipe is the perfect first step for people whose baking skills are not yet polished. What’s more? It uses your overripe bananas, is healthy, delicious and made with easily available ingredients.

Ingredients

  • 1 ½ Banana 
  • 2-3 Tbs Sugar
  • Pinch Cumin Powder
  • Pinch Baking Soda
  • Salt to Taste
  • 2 Tbs Dahi (curd or yoghurt)
  • 1.5 Cups Wheat Flour
  • 1 Tbs Ghee

Preparation

Prep: 20 minutes
Cooking: 30 minutes


  1. Prep – 20 minutes (overnight dough rest)
  2. To make the dough, churn all the above ingredients except wheat flour in a blender.
  3. In a bowl, take wheat flour and pour the blended mix over it.
  4. Knead it well. If looks wet, add flour and if it looks dry add dahi. Apply ghee on your palms and knead (it would be a little sticky dough than the chapati dough).
  5. Let it rest for overnight in the fridge or 3 hours at room temperature.
  6. Make small dough balls and then flatten them into puris.
  7. Heat oil and fry.
  8. Serve with chai or coconut chutney.
