Biskeemiya

The delectable biskeemiya is a Maldivian treat that will undoubtedly appeal to any food lover. A curry puff had ménage trois with a samosa and a spring roll, and you’re halfway to what a bis-keemiya is, and it’s as delicious as that sounds.

Ingredients

  • 1 Cup Water
  • 2 Tbsp Refined Oil
  • Salt (According to Taste)
  • 1/2 Cup Onion
  • 3 Green Chilies
  • 3/4 – 1 Cup Cabbage
  • 2 Cups Maida
  • 2 Boiled Eggs
  • Refined Oil (For Frying)

Preparation

Prep: 15 minutes
Cooking: 20 minutes


  1. Sauté onions and chillies. Next, add cabbage, sauté it until the cabbage becomes soft.
  2. Once done, mix in grated boiled eggs and season it with salt and pepper, to taste. Remove it from the heat.
  3. In a pan add the water, 2 tsp oil, salt. When the water comes to boil add the maida and mix it in that pan (this step ensures that it consumes less oil while frying) and form a dough.
  4. Roll dough in a circle and stuff the fillings into the rolled dough and fold it from both sides, forming it into rectangular shapes.
  5. Lastly, fry them until it becomes golden brown. Serve warm.
