Coconut & Curd Sandwiches

Being a Maharashtrian, I have grown up having curd and buttermilk with every meal. Married to a Tamilian, coconut invariably became the main ingredient in our meals. Combining two of our most favourite ingredients, I came up with a super-easy Sandwich recipe (inspired by Instagram). It’s almost nostalgic – like those old-school dabba sandwiches.

Ingredients

  • Serves 2
  • Makes 3 Sandwiches 
  • For the filling
  • 1/2 Cup Coconut, Grated
  • 4 Tbsp Curd
  • 1 Tbsp Ginger, Grated
  • Green Chillies, Finely Chopped
  • Salt to Taste
  • 1/4 Cup Coriander, Chopped
  • 4 Bread Slices
  • 1 Cheese Slice 
  • For the Tempering 
  • Mustard Seeds
  • Oil

Preparation

Prep: 10 minutes
Cooking: 15 minutes


  1. Heat oil in a tempering pan, add mustard seeds and turn the gas off once the seeds splutter. Keep it aside.
  2. In a bowl, mix grated coconut, curd, coriander, green chillies, ginger and salt. Give it a nice mix and keep aside for 3 minutes.
  3. Apply the mix on a bread slice, cover it with another slice of bread and cut into 4 parts.
  4. Heat another pan, add the prepared tempering and place the cut sandwich pieces. Cook till slightly golden and crisp on both sides.
  5. To serve, add small pieces of the cheese slices (optional).
