The desi corn ribs go really well with sour cocktails like a classic Margarita or rather any Tequila or Mezcal drink. Bay leaf is one of my favourites to combine with corn and makes for a very comforting snack. A vegetarian spin on ribs, flavoured with Indian curry spices. Just what you need when you’re in the mood to graze.
Ingredients
- Whole Corns
- Oil for Frying
- Bay Leaves
- 1 Lime
- Pepper
- Chilli Flakes
Preparation
Prep: 10 minutes
Cooking: 10 minutes
- Cut the cobs in half crosswise and then in quarter lengthways, so that from one cob you get 8 pieces.
- Heat a deep pan of oil and fry them for 6-7 minutes until they curl back and look like ribs, with the outer kernels starting to colour.
- Remove from the pan and drain well on kitchen paper.
- Toss the corn ribs in a bowl with salt, fried bay leaves, pepper, and chili flakes.
