Fried Brinjal

The simplicity of brinjals makes them so versatile. Whether you stuff them, bake them or fry them, they are a great hero ingredient for any dish. This one’s a quick snack idea laden with house spices.


  • 1 Brinjal (large)
  • 1 Egg
  • Salt to Taste
  • 1 1/2 Tbsp Turmeric Powder
  • 1 1/2 Tbsp Chilli Powder
  • Oil to Fry
  • Breadcrumbs To Coat The Brinjal


Prep: 5 minutes
Cooking: 7 minutes

  1. Cut the brinjals into 1-inch thick semi-circles and marinate with salt, chilli powder and turmeric. Set aside for an hour before cooking.
  2. Beat an egg and set aside.
  3. Heat oil in a shallow pan.
  4. Dip the marinated brinjals in the whisked egg, coat it with breadcrumbs in a separate plate.
  5. Shallow fry till nicely crisp.
