Fudgy Chocolate Amaranth Flour Cake

This Chocolate Fudgy Cake recipe is the perfect guilt-free dessert or cake you looking forward to baking for your loved ones. The year 2020 has made a lot of us switch to healthy eating and gave a lot of importance to local ingredients. This cake is not only super easy to bake but also eggless, gluten-free vegan and refined sugarless. The Amaranth flour used in this cake, gives a subtle nutty flavour, that goes really well with Maggi coconut milk power and Dark Chocolate.

Ingredients

  • Serves 4
  • 1 Cup Amaranth Flour
  • 1/4th Cup Maggi Coconut Milk Powder
  • 1 Cup Jaggery
  • 1/2 Cup Cocoa Powder
  • 1 Tsp Baking Soda
  • 1/2 Tsp Salt
  • 1 Tsp White Vinegar
  • 1 Cup Water
  • For the Frosting
  • Dark Chocolate 100 Grams
  • 2 Tbsp Maggi Coconut Milk Powder
  • 1/2 Cup Water
  • 2 Fresh Strawberries Sliced
  • 6 Fresh Blueberries
  • 6 Mint Leaves

Preparation

Prep: 90 minutes
Cooking: 40 minutes


  1. Preheat oven for 10 minutes (Preparation 10min)
  2. In a bowl take jaggery and water. Mix well. Now add all the dry ingredients into the bowl one by one and mix well with a whisk or spatula. (Preparation 5min)
  3. Once all the ingredients are mixed well add the vinegar. Mix gently and pour the batter into the 6inch cake tin which is lined with oil, butter or parchment paper. (Preparation 5min)
  4. Bake the cake @180degrees for 35 min (Cooking 35min). The cake will still be a little gooey from the inside which is fine.  Once baked let the cake cool down and then remove it on a dish or plate. (Cooling time 20min)
  5. Before serving the cake.  In a small bowl take Maggi coconut milk powder and add water to it. Mix well and the coconut milk is ready.  In another bowl melt dark chocolate in the microwave for 30 sec. So that the chocolate does not burn, keep stirring after 30 seconds till the chocolate is completely melted. Once the chocolate has melted add the coconut milk and mix well. The ganache should be thick and easily spreadable (Preparation 5min)
  6. Spread the ganache on the cake evenly with a knife and garnish it with fresh strawberries, blueberries and mint.  (Presentation 10min)
