This one is my family’s favourite. I always wanted that fudginess in my brownies and took me a while to crack the perfect combination of ingredients. It makes for a great accompaniment with coffee.
Ingredients
- 1 Cup Vegetable Oil
- 1.5 Cup Sugar
- 2 Large Eggs
- 1 Tsp Coffee
- 1 Tsp Water
- 1 Cup All-Purpose Flour
- 1/4 Cup Cocoa Powder
- 1 Tsp Baking Powder

- For the brownie mixture, take a bowl and add oil and sugar. Whisk well for 2-3 minutes.

- Next, add 2 large eggs and give a good whisk until the mixture gets lighter. This takes 6-7 minutes.
- Sift the dry ingredients – all-purpose flour, cocoa powder, baking powder and transfer to the wet mixture. Give a good mix to this brownie batter.
- Then add walnuts and give a quick mix.
- Now take a brownie mould, place a parchment paper and grease it. Transfer the brownie batter to this mould.
- Place this mould in a 10-minute pre-heated kadhai with salt/sand and bake for another 40 minutes (for the oven, preheat at 160 degrees for 10 minutes and bake for 30 minutes at 160 degrees).
- After 40 minutes, prick a toothpick on the brownie. If it comes out clean, it’s ready. Cool off and serve.
