Who doesn’t love makhani curries (talking about us all Indians!) and what if you could marry it with the amazing taste of Pasta! This fusion dish where our traditional makhani curry meets with the Italian Pasta is a must make at home! In a very simplistic fashion, you can make a portion that will make all happy – from elders to youngsters! This is a fresh take and a JAIN spinoff of cultural infusion! Do try it at your home!
Ingredients
- For Boiling the Pasta
- Penne Pasta or Rigatoni Pasta
- Oil
- Water
- Salt
- For Makhani Sauce
- 1 Tsp Butter
- 1 Tsp Oil
- 1 Tsp Jeera/ Cumin Seeds
- 2-3 Dry Red Chillies
- Salt
- 7-8 Small Cashew Nuts
- 3 Tomatoes (Roughly Chopped)
- 1/2 Ginger
- 2 Green Chillies (Roughly Chopped)
- 1 Tsp Red Chilli Powder
- 1 Tsp Coriander Powder (Dhaniya Powder)
- 1 Tsp Garam Masala
- Powdered Black Pepper
- Kasuri Methi
- Water
- 1 Tsp Corn Flour
- 1 Cup Milk
- 1 Green Chilly (Finely Chopped)
- Capsicum (Chopped)
- Grated Cheese
- Coriander Leaves (Chopped)
- 1 Tsp Oregano
- 1/2 Tsp Chilli Flakes
Preparation
Prep: 5 minutes
Cooking: 45 minutes
- Boil pasta in a wok with water, add 1 spoon of oil and salt. Once cooked, switch off the flame and strain the pasta. At this stage drizzle a little oil on it, mix it and leave it aside.
- For the Makhani Sauce – Take a pan – add butter and a little oil to it – add jeera (let it splutter), 2-3 dry red chillies, salt, roughly chopped tomatoes, ½ ginger and 2 green chillies roughly chopped, 1 tsp red chilli powder, 1 tsp coriander powder, 1 tsp garam masala, black pepper powder, cashew nuts crush some kasuri methi and add them – mix this all.
- Add 1 glass of water to this, stir and cover with a lid. Let it cook for 6-8minutes. Once done, let it cool and then add it to a mixer grinder and grind it to a smooth paste.
- For the final dish – In the same pan used for the sauce, add a little butter and oil. Add 1 tsp cornflour to this and stir.
- Now add 1 cup of milk and stir well – the mixture should be lump-free.
- Now add chopped green capsicum and 1 chopped green chilli and mix well.
- Add the Makhani sauce to this and mix well. Add the boiled pasta, mix and cook on slow flame.
- Add 1/4th cup of grated processed cheese and stir well. Add chopped coriander and stir.
- At last, add 1 tsp oregano and ½ tsp chilli flakes and mix. Makhani sauce pasta is ready!
- Garnish with some more cheese at the time of serving and serve hot!
