Lebanese Spread – Salad and Sour Cream

Ingredients

  • For the Salad –
  • 1 Carrot
  • 1 Onion
  • 1 Cucumber
  • 1 Beetroot
  • 1 Cabbage
  • 1 Capsicum
  • Olive Oil
  • 1 Lime Juice
  • Toasted Sesame Seeds
  • Fresh Parsley & Coriander
  • Salt to Taste
  • For the Sour Cream –
  • Hung Curd
  • 5-6 Garlic Cloves 
  • 1 Tsp Lime Juice 
  • Salt to Taste 
  • Fresh Mint Leaves

Preparation

Prep: 10 minutes

  1. For the salad, finely chop all the vegetables into thin julienne strips.
  2. Add a dressing made with olive oil, lime juice and salt. Garnish with fresh parsley and coriander leaves. Sprinkle sesame seeds.
  3. For the sour cream, hang full-fat milk yoghurt in a muslin cloth overnight to make sour cream.
  4. Finely chop garlic cloves and fresh mint.
  5. In a bowl mix the hung curd, fresh mint leaves, lime juice and salt. Keep it covered in the fridge to chill.
