Saffron & Mango Mousse

Yes, it is the summer season and we can’t have enough mangoes. We just try to fit in the king of fruit whichever way we can. Many times, we get confused as to how to name the dish. So here I present you the recipe of my Saffron and mango mousse aka kesar aam malai. Hope you enjoy it.

Ingredients

  • Serves 8
  • 1 Tbsp Saffron Strands
  • 4 Tbsp Powdered Sugar
  • 2 Cup Amul Whipping Cream
  • 1 Tsp Cardamom Powder
  • 1 Tbsp Milk to Soak Saffron Strands
  • 5 Fresh Mangoes
  • Few Saffron Strands
  • Few Saffron Strands
  • 4 To 5 Slivered Pistachios

Preparation

Prep: 30 minutes
Cooking: 15 minutes


  1. Soak the saffron strands in lukewarm milk and keep aside for a few minutes.
  2. In the meanwhile, finely chop the mangoes and sliver the almonds and pistachios.
  3. Now, take the whipping cream in a mixing bowl & add sugar and cardamom powder to it. Beat till we get stiff peaks.
  4. Now fold in the saffron soaked milk along with the chopped mangoes into the whipped cream. Do not over mix.
  5. Pour into individual moulds and chill overnight in the refrigerator.
  6. Garnish with chopped almonds, pistachios and few strands of saffron.
  7. Note – Please pick large and ripe mangoes as the amount of sugar to be used can be adjusted based on the sweetness of the fruit
