Pav Bhaji is one of the favourite go-to dishes when craving for a change and wanting to enjoy something delicious. However, the cook in me wanted something new and exciting and I stumbled upon the recipe of a famous Mumbai street food – Black Pav Bhaji. I loved the recipe and the use of some unfamiliar ingredients. I chose to give it a try and my family kept on asking for more.
Ingredients

- For the Vegetable Mash
- 6 – 7 Medium Size Potatoes
- 10 – 15 French Beans
- 1 Small Cauliflower
- 3 Medium Carrots
- 1 Capsicum
- For the Black Masala
- 2 Bay Leaves
- 1 Tsp Fennel Seeds
- 1 Black Cardamom
- 1 Tsp Black Peppercorns
- 7 – 8 Cloves
- 1 Inch Cinnamon Stick
- 2 Stone Flowers
- 2 Tsp Coriander Powder
- 1 Tsp Cumin Powder
- 1 Tsp Amchur Powder
- 1/2 Dry Coconut
- For the Bhaji
- 1 Large Onion
- 2 Medium Potatoes
- 3- 4 Green Chilies as Per Your Taste
- 3 Tbsp Oil
- 1 Tbsp Garlic Paste
- 1 Tsp Sugar
- 2 -3 Tsp Salt (Adjust as Required)
- 1 Tbsp Lemon Juice
- 1 Tbsp Butter (One May Add More as Per Preference)
- 1 Tbsp Coriander Leaves
Preparation
Prep: 20 minutes
Cooking: 15 minutes
- Boil the potatoes, peel and mash them.
- Chop the beans, carrots and capsicum. Break the cauliflower into small flowerets. Boil the vegetables except for the capsicum.
- Chop the onion, tomatoes and green chilies.
- For the black Masala, roast the dry masala on low heat till aromatic. Then add the powder spices and sauté for not more than 10 secs. Set aside to cool.
- Char ½ dry coconut on high flame. Rest and cool.
- Once cooled, grind the coconut and roasted spices to a coarse powder.
- Heat the oil in a pan. Add the garlic paste and sauté till the raw smell goes off.
- Then add chopped onions and sugar. Sauté till golden brown.
- Now add the green chillies, chopped tomatoes and capsicum. Cook till they are mushy.
- Add the black Masala and mix. Once the mixture has left oil, add the mashed potatoes and mix well.
- Add the boiled veggies and season. A lot of cooking isn’t required as all the vegetables are already cooked.
- Add the lemon juice and mix.
- Finally, finish with a tbsp of butter and chopped coriander.
- Serve hot with pav, lemon wedges, chopped onions and some butter on top.
