Cucumbers are one of the essentials for summer and there are numerous ways to turn them into salads. This is my take on a cucumber salad, which I made using Asian ingredients. It goes well with Thai Red curry.
Ingredients
- 2 Cucumbers Cut into Sticks
- 1 Tbsp Peanuts Roasted and Crushed
- For the Dressing
- 1 Tbsp Lemon Juice
- 1/2 Tbsp Soya Sauce
- 1/2-Inch Ginger Minced
- Salt
- Pepper
- Basil for Garnish
Preparation
Prep: 15 minutes
Cooking: 5 minutes
- For the dressing, combine lemon juice, soya sauce, ginger, salt and pepper. Whisk well.
- Before you sit to eat, mix cucumber and peanuts, add the dressing and basil leaves. Mix well and serve.
