Avocado Toast

My mother was recently confirmed with Diabetes & I had to help her transition from typical Indian food to a healthier Paleo diet. The avocado toast was our first attempt at transition. While she still ate regular bread, we tried to get accustomed to the avocado flavour.

Ingredients

  • 1 Whole Avocado
  • Salt & Pepper
  • 4-5 Cherry Tomatoes
  • 2 Tbsp Olive Oil
  • 2 Slices of Bread, Toasted

Preparation

Prep: 15 minutes
Cooking: 10 minutes


  1. In a baking tray or microwave bowl, add the cherry tomatoes, drizzle with olive oil & season with salt pepper. Now, bake it at 150 degrees or microwave until tomatoes are cooked.
  2. Meanwhile, cut open the avocado in half & scoop it into a bowl. Mash the avocado using a fork & drizzle some olive oil to make an instant hummus. Season with salt & pepper.
  3. Once the tomatoes are cooked. Spread the avocado hummus onto the toasted bread & top it off with roasted tomatoes.
