Litti Chokha

Litti chokha is a complete meal of Bihar and Jharkhand state. Litti is roasted whole wheat round shaped ball which is stuffed with spiced mix sattu. And serve along with baingan (eggplant), aloo (potatoes) and roasted tomatoes chokha. Chokha is a mashed relish. You can make all three chokhas or only one it’s your choice. I saw so many recipes on youtube and google but here I am sharing my recipe with you. If you don’t have tandoor, oven or coal for roasting then how would you make litties at home without all these? I cooked litties on appe pan then roast in gas.

Ingredients

  • For the Litti Chokha (Stuffed with Sattu)
  • 3 Cups Wheat Flour
  • 2 Tbsp of Desi Ghee
  • 1/2 Tsp of Salt
  • For the Stuffing
  • 2 Cups of Sattu (Roasted Gram Flour)
  • 1/2 Cup Finely Chopped Onions
  • 1 Tbsp Mixture of Finely Chopped Ginger, Garlic and Green Chilli
  • 1 Tsp of Coriander Powder
  • 1/2 Tsp of Red Chilli Powder
  • 1/2 Of Garam Masala
  • 1/2 Tsp of Roasted Cumin Powder
  • 1/2 Tsp of Roasted Fennel Seeds Powder
  • 1/4 Tsp of Asafoetida
  • 1/4 Tsp of Amchoor Powder
  • 1 Tsp Of Mustard Oil
  • 1 Tbsp of Coriander Leaves
  • 1 Tsp of Salt Or According To Taste
  • For the Chokha
  • 1 Big Roasted Eggplant
  • 1 Cup Finely Chopped Tomatoes
  • 1 Cup Finely Chopped Onions
  • 1 Tbsp Mixture of Finely Chopped Ginger, Garlic and Green Chilli
  • 1 Tsp of Coriander Powder
  • 1/2 Tsp of Red Chilli Powder
  • 1/2 Of Garam Masala
  • 1/2 Tsp of Roasted Cumin Powder
  • 1/2 Tsp of Roasted Fennel Seeds Powder
  • 1/4 Tsp of Asafoetida
  • 1/4 Tsp of Amchoor Powder
  • 1 Tsp of Mustard Oil
  • 1 Tbsp of Lemon Juice
  • 1tbsp of Coriander Leaves
  • 1 Tsp of Salt or According To Taste

Preparation

Prep: 15 minutes
Cooking: 45 minutes


  1. For making the litties – Knead soft dough of any brand wheat flour with salt and desi ghee. Keep aside for 10-15 minutes.
  2. Take a medium-sized dough ball in your hand and flatten the dough ball with your fingers.
  3. Add 1 tsp of stuffing in the centre of flattening the dough and Gather all the edges and pinch them together forming a seal.
  4. Place a deep pan on medium flame add 3 cups of water and 1 tbsp of oil. Let it boil, once the water boil add litties into boiling water. And boil it for 5 minutes in medium flame. After 5 minutes remove the litties from boiling water and keep aside.
  5. Place an appe pan on gas on medium flame and grease with desi ghee and put litties on it and bake in medium to slow flame from both sides. Brush some more ghee and bake until light golden-brown colour. Once they cooked take them out and cook again direct into gas flame as. It’s ready.
  6. If you don’t have appe pan then you can directly roast on gas or deep fry in oil.
  7. For the baigan (eggplant) ka chokha – Roast brinjal on the gas flame until it gets soft. Peel the upper layer of brinjal perfectly and mash with a masher. Add all the spices which are mentioned in the ingredients list. Mix all together and mashed.
  8. And serve hot with litties and extra cut lemon and green chilli.
