Mango, the king of all fruits. The reason why it is the king is that it tastes delicious and is packed with nutrients. I always associated mango with dessert but after this dish, not any more. This salad is filled with refreshing ingredients and best for a warm summer day. I loved the flavour. You can substitute or add any ingredient you want to the salad. Feta is an amazing substitute for the processed cheese.
Ingredients
- 1 Onion, Thinly Sliced
- 1 Red Bell Pepper, Cubbed
- 1 Small Purple Cabbage, Shredded
- 1 English Cucumber, Cubed
- 2 Amul Processed Cheese Cubes, Cut into Small Cubes
- 2 Ripe Mangoes, Cubed
- 2 Tbsp Chopped Coriander Leaves
- 2 Tbsp Chopped Mint Leaves
- 3 Tbsp Lemon Juice
- 3 Tbsp Oil
- 1 Tsp Black Salt
- 1 Tbsp Black Pepper
- 1 Tsp Red Chili Powder
- 1 Tsp Dried Ginger Powder
Preparation
Prep: 15 minutes
Cooking: 5 minutes
- In a small jar put in the lemon juice, oil, black salt, black pepper, red chilli powder and ginger powder. Close the lid of the jar. Keep aside.
- In a bowl bring in all the ingredients, onion, bell pepper, purple cabbage, cheese cubes, cucumber, mango, coriander leaves and mint leaves. Sprinkle some salt on top and toss with your hand or salad tossers. (It is advised to serve this cold, so before chopping them keep them in the fridge for about 20-30 mins).
- Get the vinaigrette jar, shake it well to emulsify. Pour it on the top of the salad. Toss the salad. Serve immediately.
