Prawns are my favourite seafood. Mangalorean style Ghee Roast are one of the best dishes in seafood. The succulent pieces of marinated prawns cooked in rich roasted ground spices and Ghee makes this a lip-smacking one!!
Ingredients
- For the Marination
- 300 gms Prawns, Cleaned and Deveined
- 2 Tbsp Hung Curd
- 1.2 Tsp Turmeric Powder
- 1 Tsp Salt
- For The Dry Roast
- 5-6 Dried Red Chillies
- 1 Tsp Mustard Seeds
- 1 Tsp Fenugreek Seeds
- 1 Tsp Cumin Seeds
- 2 Tsp Coriander Seeds
- 1 Tsp Fennel Seeds
- 1 Tsp Black Peppercorns
- For the Curry
- 1 Tsp Garlic Paste
- 1 Onion, Finely Chopped
- 1 Tsp Tamarind Pulp
- 5-7 Curry Leaves
- 2 Green Chillies, Slit
- Pinch of Asafoetida
- Salt, To Taste
- 1 Tbsp Oil
- 1.5 Tbsp Ghee
Preparation
Prep: 15 minutes
Cooking: 20 minutes
- Marinate the prawns for 10 minutes.
- Dry roast the spices mentioned on medium flame until aromatic. Keep it aside to cool.
- Ground the roasted spices with tamarind and garlic paste. Add water if required.
- Heat oil in a pan on medium flame. Cook the marinated prawns on both sides for 2 minutes each. Drain the prawns and keep it aside.
- Add Ghee to the pan. Add onions, asafoetida, curry leaves. let the onions turn translucent.
- Add the ground paste of spices and salt. Cook until the ghee separates out in the pan.
- Add the prawns and slit green chillies. Cook for another minute and serve hot. You can add water if you want slight runny consistency.
