Spaghetti Aglio-e-olio

Handful of ingredients and just 15mins are that what you need to make this beautiful aglio a olio. A simplest, easy, sauceless pasta!


  • 200 gms Spaghetti (Or Any Pasta)
  • 4 Tsp Olive Oil
  • 8-9 Garlic Cloves, Thinly Sliced
  • 1 Tsp Red Chili Flakes
  • 1 Tsp Basil
  • 1/4 Cup (Green of Your Choice, Maybe Parsley, Coriander, Whichever Is Available)
  • Cheese (Optional, For Garnish)
  • Salt


Prep: 10 minutes
Cooking: 20 minutes

  1. In a pan, add sliced garlic cloves in olive oil and let it simmer on a very low flame. Let garlic change the colour, we don’t have to burn garlic.
  2. Add red chilli flakes, again don’t burn.
  3. Add a bit of pasta water. Add al dente pasta (70% cooked). And we shall let the rest of the pasta cook completely in the pan along with the garlic.
  4. Switch off the flame and add salt. Mix.
  5. Add your greens. I had my homegrown young basil leaves. You can add greens of your choice or as per your green availability.
  6. Grate cheese for garnish. Although it tastes best with Parmesan cheese. But can add any processed cheese.
  7. Toss until the pasta is evenly coated.
  8. Serve hot straight away.
