Handful of ingredients and just 15mins are that what you need to make this beautiful aglio a olio. A simplest, easy, sauceless pasta!
Ingredients
- 200 gms Spaghetti (Or Any Pasta)
- 4 Tsp Olive Oil
- 8-9 Garlic Cloves, Thinly Sliced
- 1 Tsp Red Chili Flakes
- 1 Tsp Basil
- 1/4 Cup (Green of Your Choice, Maybe Parsley, Coriander, Whichever Is Available)
- Cheese (Optional, For Garnish)
- Salt
Preparation
Prep: 10 minutes
Cooking: 20 minutes
- In a pan, add sliced garlic cloves in olive oil and let it simmer on a very low flame. Let garlic change the colour, we don’t have to burn garlic.
- Add red chilli flakes, again don’t burn.
- Add a bit of pasta water. Add al dente pasta (70% cooked). And we shall let the rest of the pasta cook completely in the pan along with the garlic.
- Switch off the flame and add salt. Mix.
- Add your greens. I had my homegrown young basil leaves. You can add greens of your choice or as per your green availability.
- Grate cheese for garnish. Although it tastes best with Parmesan cheese. But can add any processed cheese.
- Toss until the pasta is evenly coated.
- Serve hot straight away.
