In this busy and stressful schedule, we generally tend to skip our balanced meals. This salad is super easy to make and fulfils our body requirements as its filled with protein, antioxidants and fresh herbs.
Ingredients
- 250 Gm Boneless Chicken (Breast/Thigh)
- 2 Tbsp Lemon Juice
- 6-7 Minced Garlic
- 1 Tsp Salt
- 10-12 Dry Red Chillies
- 1 Tsp Black Pepper Powder
- 1 Tbsp Cumin Powder
- 1 Tbsp Coriander Powder
- 1 Tbsp Kashmiri Red Chilli Powder
- 2-3 Tbsp Olive Oil (Figaro)
- 3-4 Tbsp Curd
- 1 Cup Mixed Lettuce
- 1 Green Bell Pepper
- ½ Cup Spinach Leaves
- ½ Cup Cabbage (Shredded)
- 6-7 Cherry Tomatoes
- 6-7 Button Mushrooms
- ¼ Cup Zucchini
- 6-7 Black Olives (Optional)
- 2-3 Tbsp Boiled Corns
- ¼ Cup Fresh Mint Leaves
Preparation
Prep: 15 minutes
Cooking: 15 minutes
- Take the chicken in a bowl. Add salt, pepper, red chilli powder, red chilli paste, minced garlic, cumin powder, coriander powder and lemon juice and marinate well. Allow it to rest for minimum of 15 mins.
- Take a grill pan and heat olive oil. Place the marinated chicken and cook on each side for 4-5 minutes. AND you Chicken is READY.
- Take a cup and add 2 Tbsp of olive oil, salt, black pepper, lemon juice and mix well. SALAD DRESSING is READY.
- For the Salad, add lettuce, spinach, bell pepper, cabbage, cherry tomatoes, mushrooms, zucchini and boiled corns.
- Serve the chicken fillets with prepared salad and garnish with fresh mint leaves and olives.
