Veg Au-gratin is the easiest recipe if you are craving a delicious, feel-good dish that can be made really quickly. Crusty on the top, creamy inside and loaded with a variety of veggies. It’s a cheese lover’s delight!
Ingredients
- Vegetables (finely chopped)
- 1 Green Capsicum (finely chopped)
- 1 Potato (finely chopped)
- 100 Gms Beans (finely chopped)
- 1/2 Cup Green Peas (finely chopped)
- Salt to Taste
- For White Sauce
- 50 Gms Butter
- 300 Gms Milk
- 1 Tbsp Flour (Maida)
- 1 Tbsp Chilli Flakes
- 1 Tbsp Oregano
- 1 Tsp freshly ground pepper
- 1 Tsp Chopped Garlic
- 1/4 Cup Cheese
- Salt to Taste

Prep: 15 minutes
Cooking: 30 minutes
- Boil the veggies in a pan with water and salt (don’t over-cook, they should be crunchy). Once boiled, drain the water (you may store the water and use it for soup later).
- While the veggies are boiling, start making the white sauce. Heat the pan and add butter, garlic and flour. Roast it for 3 to 5 minutes.
- Next, add milk while continuously stirring so that there are no lumps. Gradually it will start to thicken. Then add cheese and let it boil.
- Season with salt, pepper, oregano and chilli flakes.
- Mix the veggies in the white sauce and transfer it into an oven-safe baking tray.
- Sprinkle some cheese and bake it at 200 degrees for 20 minutes or till the top turns golden.
