Vegetable Fried Rice with Chilli Paneer

Being a chef, I always had a fascination towards other cuisines apart from Indian. And my favourite cuisine is Chinese or rather Indo-Chinese cuisine. It is said to be one of the most loved cuisine apart from Italian around the world. I love Indo-Chinese food because it carries extremely bold and distinct flavours with the usage of minimal ingredients.

Ingredients

  • For the Vegetable Fried Rice
  • 300 gm of Rice (Boiled)
  • 100 gm of Carrots (brunoise)
  • 100 gm of Capsicum (brunoise)
  • 50 gm of Onions (brunoise – cut is small dices or cubes)
  • 10 ml of Soya Sauce
  • 10 ml of Red Chilli Sauce
  • 30 gm of Garlic (chopped)
  • Salt          
  • Black Pepper
  • Oil
  • For the Chilli Paneer
  • 300 gm of Paneer (cubes)
  • 50 gm of Cornflour      
  • 10 ml of Oil        
  • 20 gm of Garlic (chopped)
  • 100 gm of Green Onions   
  • 100 gm of Capsicum (diced)
  • 20 gm of Green Chillies  
  • 30 gm of Red Chilli Paste
  • 20 ml of Soya Sauce     
  • 10 gm of Salt                 
  • 10 gm of Black Pepper  
  • 30 gm of Tomato Paste   

Preparation

Prep: 20 minutes
Cooking: 20 minutes


  1. For the Vegetable Fried Rice – In a hot wok, put oil, sauté garlic. Once it is well browned, sauté the onions, capsicum, carrots until they have left water.
  2. Once the vegetables are cooked, add in the spicy red chilli sauce into it and let it cook.
  3. Now add in the cooked rice and soya sauce. Stir it vigorously. Once sautéed nicely, check the seasoning and add salt and black pepper accordingly. Serve hot!
  4. For the Chilli Paneer – Cut all the paneer into cubes and coat all of them with cornflour. Fry all of them in hot oil until golden brown from outside.
  5. Now in a hot wok, heat oil, sauté garlic, green chillies and green onions and cook them. Now add in all capsicum into them and sauté it.
  6. Add the red chilli paste and cook for 5-10 minutes. Add the fried paneer and sauté them. Now add in the soya sauce, tomato ketchup and vinegar (optional) into it. Add 2 cups of water with cornflour mixed into it.
  7. Boil it and allow it to thicken and boil. Check the seasoning and add salt and pepper accordingly.
  8. Once suitable consistency is obtained, garnish it with fried garlic and green onions and serve hot.
